Frisbee-sized Cinnamon Rolls




Seth mentions Esme's Frisbee-sized cinnamon rolls to Jacob in Breaking Dawn. This is a recipe to make only one in a round, disposable foil container. I'm sure Esme followed the traditional way of rolling a big rectangle into a roll, but we've adapted the approach so individuals can make their own.

DOUGH

Put 1 & 3/4 cup of bread flour on the counter. Fluff the bread flour in the bag or in a bowl before you measure. Scoop measuring cups gently and knife off the top without patting the flour down.

Sprinkle 2 teaspoons of instant yeast on top of the flour. (Not active dry yeast.)
Sprinkle 1/2 teaspoon of salt and 2 tablespoons of sugar on top of the flour.


Mix with fingers and form a well in the middle of the flour mixture.

In a microwaveable bowl, melt 2 tablespoons of butter.
In another bowl, beat 1 egg.  Add the butter and 1/2 cup of milk. Beat till combined.

Pour a little of the liquid into the flour and mix with your fingers so the liquid doesn't go all over the place. Keep doing this until all the liquid is in the flour. Knead until smooth. Scrape the counter with a metal scraper to get all the dough combined.

Let dough rest.


FILLING

Melt 2 tablespoons of butter in the microwave. Put aside.
Mix 3 tablespoons of light or dark brown sugar with 1 teaspoon of cinnamon.

Cut the dough into 4 long pieces. Roll one piece into a long rope. Begin coiling it in the center of the foil pan. Sprinkle the sugar-cinnamon mixture in between the coils. Continue with the other three pieces of dough and getting the cinnamon mix between the coils. The dough will rise with the cinnamon between the rolls.

Next pour the butter over the top and spread around with fingers or the back of a spoon.
The last thing, to encourage the sugar to melt, squeeze a drizzle of maple-flavored syrup between the coils.
Cover and let sit for 60-90 minutes.

Preheat the oven to 350 degrees. Bake for 20-25 minutes.


Here the dough is rising to double the size.
